RESTAURANT CAPACITY 
The decor of this very elegant, intimate restaurant with large Georgian windows and artworks adorning the walls, has been designed by George Freedman. Bilson’s can accommodate groups of up to 100 people in banquet style or 80 persons in
three hat comfort. 

PRIVATE DINING ROOM
The private dining room in the restaurant seats 18 people comfortably and the Sir James Fairfax Room, a wood panelled board room situated on the Mezzanine Floor of the hotel, accommodates 30 people.

FOOD AND BEVERAGE
Prepared by highly acclaimed chef Tony Bilson and his family of chefs, sommeliers and service staff. The cuisine is seasonal and contemporary and backed by a wine list of 600 classic
and less known wines from the world’s finest vineyards.
