Meyjitte Boughenout is one of the very few 2 Michelin Star chefs in Australia and is continually recognised as one of the country’s Top 10 chefs. Absynthe is his creation and his specialty is degustation dining. Titled “A Journey into Taste”, Meyjitte’s degustation menu comprises numerous small courses formulated to flow from one dish to the next. A vegetarian diet can be accommodated and dietary needs can be taken into consideration, however prior notice is necessary. Absynthe has complimented each course with a specially selected wine, an exciting way to sample a range of exceptional international wines. You can also select from our extensive wine cellar boasting 700 plus different labels from around the world. We have had many clients asking to bring their own special bottle and so we have introduced this option from Monday to Thursday with a corkage of $18.50 a bottle.
Saturday evening is Gourmet Night - a chance to sample the best of Absynthe. We feature only the Tasting Menu of seven courses all beautifully presented and designed to excite your palate. No a la carte is available on Saturday nights. A la carte is available from Monday to Friday and has an abundance of choices with the freshest ingredients and the finest produce.

Meyjitte gained his experience by working closely with numerous three Michelin Starred Chefs in France, and at age 25 was awarded his hard-earned 2 Michelin stars as Executive Chef at Belgian restaurant Scholtesh. He believes in using only the freshest local produce, an approach to Australian cuisine that gives his food an exciting dimension. Meyjitte is considered to be one of Australia’s most innovative and creative chefs.
FUNCTIONS
The restaurant is available for functions so you can have a night out with a group of friends, plan a family celebration, book a work function, or use the space for special events and launches. Absynthe has a series of group menus available and there is a small private room secluded from the restaurant that is perfect for small functions. You can also book out the entire restaurant for a function for many, or a special occasion for two. Meyjitte and his staff are only too happy to talk to you about how they can help make your event one to remember.
